Do I need to buy a captive portal server or install software on site?

No. That is the whole point of a cloud captive portal. There is no appliance in your back office, no controller licence and no software to patch. Combway hosts the portal; your hardware simply enforces it. If the shop loses power, you plug the AP back in and it picks up where it left off.

Can guests leave me their phone number when they connect to my WiFi?
